The Powerful Pineapple – Throwback Thursday

I thought I had lost this video! I recorded it as an “audition” of sorts for a cooking blog. I got the job but it never got off the ground. I was digging through my old YouTube channel and found it!

We were living in Hawaii at the time so pineapples were plentiful and as fresh as they get. My favorite was the white pineapple. When I first started working at the hospital, a nurse brought in a white pineapple and then gave me the top to plant. It took forever to grow the fruit but it was worth the wait! Even once the fruit appears, it takes about 6 months to grow and ripen.

Although I do promote a low-carbohydrate diet, my main focus is healthy and unrefined food. The pineapple has many health benefits (especially if you eat the core!). Used as an occasional sweet treat in place of unhealthy refined cakes and cookies. It is nature’s perfect dessert! It can, however, present a challenge to get to the best part and this video will show you how to quickly and easily cut and present a beautiful treat.
