Easy Caesar Salad

Confession…I don’t like salads. I’ve never liked salads. Let’s face it – lettuce has very little flavor and most of us wouldn’t bother to eat the lettuce without all of the accompanying additions of other more flavorful vegetables, cheese, nuts, seeds, eggs, bacon, meat, seafood, and other seasonings.

So I was pleasantly surprised when I was “tricked” into trying this salad and loving it enough to ask for seconds. You see, if I had known what was in this salad, I never would have tried it. But oh, how glad I am that I did try it! Watch the video below for the story…

Recipe tips:

  • use a good food processor to get the best texture
  • you can use either olive oil or avocado oil, or a combination of both.
  • the original recipe called for Worcestershire sauce which I didn’t use in the video (because I didn’t have any!).

Caesar Salad with Grilled Shrimp

Quick and easy salad you can serve with any grilled meat.
Course: Salad

Ingredients

  • 1 can flat anchovies in olive oil
  • 4 cloves garlic
  • 1 tbsp lemon juice
  • 1/2 tbsp Worcestershire sauce
  • 1 tsp whole grain mustard
  • 1 cup olive or avocado oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • Place all ingredients into a food processor and process on high for 30 seconds or until smooth.
    Serve over romaine lettuce with grilled shrimp or chicken.
