An easy low-carb twist on an old favorite using coconut flour.

Ingredients

  • 5 eggs
  • 1/2 cup coconut flour
  • 1/4 cup monk fruit sweetener
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1 tbsp vanilla extract
  • 1/2 cup avocado oil
  • 1 medium zucchini grated (about 2 cups)

Instructions

  • Beat eggs until foamy.
  • Add remainder of ingredients and mix well.
  • Pour into a silicone loaf pan and bake at 350 degrees for 45-50 minutes.
